Vinification & Aging
Grapes were harvested by hand. Cold maceration for 7 to 10 days. Fermentation is done in stainless steel tanks at controlled temperatures. Wine is racked and put back into tank where malolactic fermentation is carried out.
50% of the wine matured for 12months in large 1,500L & 3,000L French Oak barrels. 30% in 225lt barriques for 12 months. 20% in stainless steel tanks.
Ecosystems
The privately owned vineyards are located on hillsides with clay-loam textured soil, with a high percentage of limestone. Douloufakis owns 20 hectares in total. Nikos Douloufakis’ decided he wanted to invest in local varieties such as Liatiko, Vidiano, and Malvasia di Candia Aromatica - giving prominence to the potential of wines from Cretan varieties.
Tasting Notes
Liatiko variety gives us delicate and light wines with ruby color. We suggest you try it in a burgundy shape glass that perfectly unfolds its aromas. It has concentrated aromas of fresh red fruits, herbs, and light floral aromas. As it ages, develops a unique bouquet of ripe fruits, leather, and spices. It has light body, good acidity, soft and delicious tannins and long aftertaste, traits that portrait it as a very elegant wine.
