Vinification & Aging
Grapes are harvested by hand. Fermentation is done in 225lt French Oak & Acacia barriques followed by 3 months of batonnage on the fine lees in barriques.
The wine spends a total of 5 months in used barriques. French Oak and Acacia barrels are both used. 30% Acacia, 70% French Oak.
Ecosystems
The privately owned vineyards are located on hillsides with clay-loam textured soil, with a high percentage of limestone. Douloufakis owns 20 hectares in total. Nikos Douloufakis’ decided he wanted to invest in local varieties such as Liatiko, Vidiano, and Malvasia di Candia Aromatica - giving prominence to the potential of wines from Cretan varieties.
Tasting Notes
Very nice golden color, with green and yellow hues. Its aroma is rich of white flowers and citrus fruits, with a delicate buttery bouquet of a slight beeswax scent, apricot, linden, and melon. Rich flavor that, while being aged in bottle, gets velvet, buttery and develops a dense apricot character. You can distinguish a seductive mineral flavor in the background. Superior, long-lasting aftertaste second to none, in apricot tones.
