Vinification & Aging

This is followed by fermentation in stainless steel tanks initially with native yeasts, so as not to alter the pure and crystal-clear character of Santorini and stay with fine lees for 9 months with regular batonnage. The result is a wonderful wine and at the same time, a different expression from the rest of the Cuvees. In any case, this is the goal of the cuvee series: the different reflections of Santorini terroir. As a result, next to the structured finesse of "Cuvee Monsignori", the power of "Cuvee Evdemon" and the florality of "Cuvee Gerontampelo" comes a more delicate expression: "Cuvee Palatia".

Ecosystems

"Cuvee Palatia" is a complex mosaic of 7 great vineyards cultivated for many years by the Argyros family: Kavalieros, Louros, Ftelos, Vassalia, Kamarades, Agios Ioannis and Kastanas. 7 vineyards in diverse locations, which paradoxically stand on the same denominator: generosity and elegance. The average age of vineyards is 120-180 years. The cultivation protocol follows the high standards imposed since 1903 by the heritage and history of Estate Argyros. Intense manual work in extreme weather conditions and very selective harvesting so that only the best grapes reach the winery.

Tasting Notes

"Cuvee Palatia", or as the full name is, "The Palaces of Monsignori", derives its name from the area where Monsignori lived. It is a monovarietal Assyrtiko emphasizes the diversity of different vineyard parcels within the island itself. The "Cuvee Palatia" on the nose has the characteristic volcanic allusions of Santorini, the ashy minerality reminiscent of carved flintstone along with beautiful floral hints such as jasmine and Mediterranean herbs such savory and caper leaves. In the mouth it is an "elegant attack" as it has the high, sharp acidity of assyrtiko along with the rich body and a very long saline aftertaste left by the proximity of vineyards to the Aegean Sea.
