Vinification & Aging
After crushing, only the free-run juice is used. Fermentation is stopped at approximately 9 g/L residual sugar to preserve freshness, fruit expression, and balance. The wine is vinified exclusively in stainless steel tanks.
Ecosystems
Makarounas Winery is located in Letymbou, Paphos, where four generations of the family have cultivated vineyards. The estate farms 28 hectares of certified organic vineyards planted between 380–550 meters elevation on soils rich in crystal gypsum and limestone.
The winery focuses on low-intervention winemaking with spontaneous fermentations and an emphasis on indigenous Cypriot grape varieties. All vineyards are privately owned and estate farmed, allowing complete control over quality from vineyard to bottle.
Tasting Notes
The grapes come from old bush vines grown in hillside vineyards. The combination of altitude, limestone, and gypsum soils contributes freshness, salinity, and tension to the wine.
