Vinification & Aging

Grapes are harvested in October. Soft pressing whole cluster and spontaneous fermentation in Stainless Steel tanks for 11 days.

Aged for 8 months on the lees in tank, Bâtonnage twice per week.

Ecosystems

The vineyards cover 25 hectares of land, with new plantings added every year. They are located at an altitude of 400 - 600 m and are influenced by the warm Mediterranean climate and the considerable rainfall (620 mm / year, on average). The surrounding hills, the crystal gypsum, limestone and quartz rich soils, together with the uninterrupted exposure to the winds of the valley, modify the local mesoclimate.

Tasting Notes

The name Spourtiko is believed to derive from the Cypriot Greek verb ‘spourto,’ meaning ‘to burst’ and referring to its grapes’ tendency to crack easily when fully ripe. Here, this white grape is whole-cluster pressed and fermented in steel, aged eight months on lees with batonnage. Lean, bright, and pure with lovely mineral character and pronounced salinity leading to a vivid, bone-dry finish.
