Vinification & Aging

Grapes are harvested by hand from the vineyards. They spend a night in a refrigerator at cold temperatures. Next day whole-cluster sorting and pressing. Cold maceration at low temperatures for 1-2 days, then the must is transferred into the stainless steel where fermentation takes place.

The wine remains on the lees for 18 months in the tank and is bottled 2 years after the grapes were harvested.

Ecosystems

The vines are classified as old vines, over 50 years in age. The soil of Santorini is unique, the whole island is a super volcano and has been covered with volcanic material since the last eruption in 1620 B.C. Kavalieros is one of the best vineyard blocks located in the town Imerovigli on the island of Santorini, offering an exquisite Assyrtiko with exceptional characteristics.

Tasting Notes

Medium lemon with golden hues. An austere, with intense minerality, citrus fruits, herbs, and honey hints. Full-bodied with flavors of citrus fruit and herbs. Refreshing acidity and long-lasting aftertaste where minerality dominates.
