Vinification & Aging
Grapes are hand-picked, harvested ripe, then sorted and destemmed. A second sorting to remove any impurities then the grapes are transferred unbroken into 225L, 300L and 500L French Oak barrels, 20% new, for fermentation. Post fermentation the wine is racked then put back into barrel.
The wine remains in 225L & 300L French Oak for 18 months then bottled.
Ecosystems
The soil of Santorini is unique; the whole island is a super volcano and has been covered with volcanic material since the last eruption in 1620 B.C. These vines are classified as old vines, over 50 years in age. The wine producing lineage of the island makes it part of the global historic legacy of grape cultivation. Mavrotragano is an indigenous grape variety of Santorini. Domaine Sigalas believes in the high quality of this variety.
Tasting Notes
Deep ruby color. The nose is complex with ripe red fruits, marmalades, figs, and sweet spices and Fullbodied with flavors similar to those of the nose. Minerality is evident, tannins and acidity in balance. Long lasting and persistent aftertaste.
